غذاهای کم کلسترول

اخیراً بعضی از غذاهایی تولید نموده اند که ادعا می شود سطح کلسترول خون را به علت تغییر و تبدیلی که در مواد اولیه آن داده اند، کاهش می دهند. گو اینکه شواهدی در دست است که بعضی از این غذاها ممکن است سطح کلسترول خون را کاهش دهند، ولی ایمن بودن آنها در دراز مدت هنوز مشخص نشده است. برای آنکه ثابت شود که این گونه غذاها می توانند در جلوگیری از بیماریهای قلب، مؤثر واقع شوند به تحقیقات بیشتری نیازمندیم.
آیا خوردن مارگارین هایی که در آنها استرول های غنی شده (کلسترول، ارگوسترول و غیره…) بکار برده شده است، یا کره می توانند کمکی به پایین آوردن سطح کلسترول خون داشته باشند؟
شواهدی در دست است که موادی که به آنها استرول های گیاهی می گویند، و استانول ها، که آن را به مارگارین و بعضی از کره ها می افزایند، ممکن است سطح کلسترول خون را پایین آورند. برای تأثیر گذاری مقدار بیشتری از استرول و استانول ها در دراز مدت بر بدن، به تحقیقات بیشتری نیازمندیم. چنانچه ثابت شود برای آنکه افراد بتوانند کلسترول خون خود را کاهش دهند باید مقدار بیشتری از این دو ماده مصرف نمایند. مقدار اضافی کالری که از این راه به بدن آنان وارد می شود ممکن است آن اثر خوب قبلی را از بین ببرد.
